Starting your journey at Rhodes, where crusaders' stories and mediaeval walls set the scene, Sail to Symi, a postcard-perfect harbor where ochre and peach blushing neoclassical homes abound. Climb the 500 steps to Panormitis Monastery, whose bells resound over blue seas, then feast on symian shrimp at a riverside bara as the sun sets behind the hills. Arriving early will help you to avoid the noon boat throngs.

Stern-to in Yialos harbour (free, fills before 13:00 in July–August). Drop bow anchor — clear bottom but watch for old chains. Pedi Bay is the calmer overflow anchorage.

SymiNisyros (Pali)

Glide to Nisyros, an island still under ground disturbance. Trekking into the Stefanos Crater, its sulfur vents screaming like dragons, then meander Mandraki's cobbled paths lined with cobalt-domed churches. Then sip soumada, or almond drink, under a vine-draped pergola after soaking in the hot springs of Loutra. Don't miss: Snag a jar from a local stand; the volcanic soil of the island produces the most fragrant capers from Aegean.

Sail to Kos, the Hippocrates birthplace. After cycling the Asklepion, historic ruins where medicine started, immerse into Therma Beach's hot springs. Join residents of Kos Town under a 2,400-year-old plane tree late at night for kleftiko, slow-roasted lamb. Pro tip: See secret coves around Alykes Salt Lake by renting an e-bike.

Savoring mizithra cheese drizzled with thyme honey, dine in Mikro Chorio, a ghost town rebuilt as a taverna-lit haven. Eco-win: Toast with organic wine—Tilos is the first zero-waste island in Greece.

TilosChalki

Sail to Chalki free of cars, where donkeys still walk cobblestones. After swimming in the neon-blue waters of Snorkel Pontamos Cove, ascend to the Knights' Castle for sunset views of Turkey's coast. At Taverna Giorgos, the harbour lights sparkle like fireflies while you feast on pougia, sun-dried octopus. Local secret: From Yiannis' backstreet distillery, get a jar of souma (fig spirit).

ChalkiRhodes (Lindos)

Go back to Rhodes via Lindos, where a hill of whitewashed anarchy sits atop an ancient city crown. Trek the donkey road to the Temple of Athena, then cool yourself in St. Paul's Bay, a crescent of aquamarine flanked by rocks. Dine on melekouni, sesame-honey bars, under a rooftop taverna while the Aegean breeze dances through your hair. Steer clear of crowds. See the city first thing in morning; gates open at eight AM.
